DIETETICS (2002)
The third version of this handbook (the first appeared in 1992) was revised with
consideration for readers’ comments and latest progress in the science of nutrition. New
data were added, concerning vegetarian diets, diets for patients exposed to radiation or
living in regions exposed to radiation; a new section deals with bioactive food additives.
Seven-day menus were revised with consideration for the new list of dishes of rational and
therapeutic nutrition. The supplement “Recipes of dietetic dishes” was essentially
extended and adapted to the new list published in 1995-1996. Mechanisms of therapeutic
effect of food are discussed with due regard of recent progress in the science of
nutrition and allied sciences.
Tutelyan V.A., Popova T.S. This monograph presents the theoretical basis and practical aspects of a
new trend in dietetic treatment, consisting in optimization of nutritive support by using
a new class of bioactive additives: nutriceutics and pre- and probiotics. The authors
present the modern aspects in the concept of optimal nutrition, which suggests obligatory
supply of the necessary macro- and micronutrients and essential non-alimentary components
of food to the organism. Positive therapeutic effect of antioxidants, specific amino acid
and lipid nutrients, alimentary fibers, pre- and probiotics in therapy and prevention of
some diseases is discussed. Special attention is paid to the use of nutriceutics
(glutamine, arginin, omega-3 fatty acids) for correction of immune status and improvement
of the defense potential in some diseases and injuries.
